Super Mario Galaxy (as well as its sequel, Super Mario Galaxy 2 - which is pretty much just more of the first game). It had lots of the great 3D platforming from Super Mario 64 and featured a lot of traditional Mario fare, but in addition, it added in a cool gravity effects, had a simple yet effective control scheme, creative level designs, and a rich orchestral soundtrack.
